Born in Claremore, OK on October 18, 1940, to Walker and Adell (Weddle) Casey. She was the first born of twins, which she often liked to tease her brother about. She was an amazing speller and enjoyed gardening and reading Christian books.

Carol and Joe traveled the country with his pipeline job but Claremore was home. In 1982 they opened Cotton Eyed Joe's BBQ in Claremore and later another one in Noel, MO. Carol loved to water ski even though she didn't know how to swim. She later took swimming lessons and taught many children how to swim in her backyard swimming pool.

Carol has left a legacy that will live on in the lives of her family and friends. She is survived by her husband of 61 years Joe, children, Randy Willis and wife Rhonda, Janet Hayes, Ginger Erwin and husband Joe, Joe Henderson Jr. and Molly the pooch.
